California Quinoa Salad
2 cups mixed quinoa from Trader Joe’s – regular quinoa or red quinoa would work well here too
4 cups water (for cooking quinoa – I cooked mine in my rice cooker on the white rice setting)
1 package frozen mango from Trader Joe’s, thawed OR 2-3 diced fresh mangos
1/2 large red onion, diced
1 medium to large red pepper, diced
1 small bunch cilantro, chopped
1-2 cups shredded, unsweetened coconut
3/4 – 1 cup unsalted, dry-toasted slivered almonds
1-1 1/2 cups raisins (I use the golden raisins from Trader Joes)
2-3 cups frozen edamame, thawed
Juice of 4-5 limes
3 – 4 Tbsp Balsamic Vinegar (I used organic white balsamic vinegar)
Instructions:
1. Rinse quinoa well, cook as directed.
2. Fluff quinoa well when done, spread out and let cool.
3. Add all other ingredients and toss.
4. Enjoy cold!!
I tried this from the deli at Whole Foods and LOVED LOVED LOVED it!! Thanks for the recipe. Even though the ingrediants were on the container it came in, the measurments were not. Thanks!!! Now if we can only get a Trader Joe's here in Orlando :(

ReplyDeleteI've kept it for around 5 days. You can cut the recipe in half if you like. It makes a ton so only make the full amount if you have a lot of people eating it.

ReplyDeleteYou can just remove the mango if you don't like it. I've never substituted anything for it.
DeleteIs there a big difference between white balsamic vinegar and the brown kind? Can you use the brown kind for this recipe?
ReplyDeleteI think you can use regular balsamic vinegar but it will change the color of the salad. You can buy white balsamic at Trader Joe's or any grocery store. If you don't want to buy it, just use reg...you'll be fine

ReplyDeleteKari, I've added the small size cooked shrimp to it for my husband and son and they really liked it. You could also use bay shrimp. I'm sure you could add shredded chicken as well but the shrimp was a hit! Enjoy!
DeleteSomeone on here had another Quinoa Salad and they said to use 1 1/2 cups of water to a cup of Quinoa or in this case, to use 3 cups of water to 2 cups of Quinoa and that if you used a 1 to 2 ratio it would be too mushy. Any comment on this? It does sound good.
ReplyDeleteMine wasn't mushy but you can make it according to your quinoa package directions. Sometimes I use a little less water and it turns out fine. You just don't want the quinoa crunchy..which can happen if there's not enough water.
DeleteAlso, that's great you're trying to eliminate animal protein and dairy. That way, you're not contributing to the abuse of factory farm animals and are actually helping to save our planet, as cow manure creates a lot of greenhouse gases! I'd be a little concerned though about you doing triathlons, as I've read a lot about how marathons are bad for the body!
ReplyDeleteMy exercise regimen is very healthy. I use a trainer and don't overtrain. I've done 3 ironman, multiple marathons, and ran the Boston marathon a year ago. It is way worse on the body to be sedentary and not live out your passion!

ReplyDeleteI just go by the ratio of water to quinoa on the package. I sometimes add a little more water if it's not done and is drying up. You can't mess it up really, so I'm sure you'll make it fine :)

I have been looking at this recipe and wanting to try it for a while since it looks so good. I didn't have fresh limes and used lime juice from the bottle. I might not have added enough juice, and I thought that this needed more flavor. It was excellent after I added some Kraft Strawberry Balsamic Vinaigrette. Thanks for the recipe, I am definitely making this again!
