I am a stay at home mother of three and keep very busy with my husband and kids. I love to workout and participate in numerous triathlons and running races. This year I competed in my sixth Ironman triathlon. I am on a continual quest to eat healthy and keep my family healthy with nutritious and delicious food! I have been eating plant strong for over 7 years and want to share what I am learning during this process. I have read multiple books on eating plant strong am trying to live out this healthy way of eating by eliminating all animal protein and dairy.
